These are super as a main meal any evening, ideal for lunchtime leftovers and you will impress many a dinner guest if you were to sever mini ones of these as canapés.

Today we will give you the Black pudding, Potato & Prawn Bruschetta Tapas recipes, come back next week for the Tomato Bruschetta, Mushroom Bruschetta and Mango Salad.

Makes: 4 servings

Preparation Time: 20 minutes

Total Time:  55 minutes

Ingredients

Black Pudding:

  • 280g Black Pudding
  • 2tbs of tomato relish
  • 8 slices of Dry cure Streaky rashers

Potato & Chorizo 

  • 200g Baby sliced potato
  • 1 med onion
  • 1/2 glass of dry white wine
  • 1tbs olive oil
  • 100g Chorizo sausage

Prawn Bruschetta

  • 8 ,1cm thick slices of French stick
  • 2tbs olive oil
  • 150g of Prawns
  • Large handful of fresh chopped coriander
  • 1 finely chopped red chilli
  • 1 grated clove of garlic
  • 1/2tsp cracked black pepper

PREPARATION

Potato: 1/ Place the potatoes into a pan of water, bring to the boil and cook until tender, drain and set to one side, While these cook place the sliced onions in a large frying pan with the olive oil, cook for 2-3 minutes, add the wine and reduce until this has almost disappeared, you really just want 1-2 tbs of wine left in the pan, add the sliced Chorizo, cook for 1-2 minutes, add the cooked potato and cook for a further 3-4 minutes. Then serve.

Black Pudding: 2/ Slice the black pudding, butter the relish onto the flat sides of the pudding, cut each rasher into 3 and wrap around the pudding and relish, place on a lined baking sheet and place in a moderate oven for 10-12 minutes. turning once.

Prawn: 3/ Place the sliced bread on a baking sheet, drizzle with olive oil and bake until golden and crunchy. Place the prawns, chilli, garlic and coriander in a pan, (if using fresh prawns cook until they turn pink, if using already cooked prawns, then you are just warming them through) try not to over cook. Place the Prawn’s onto the bread, finish with cracked black pepper and serve.

It is a scrummy treat any time of the year but with the addition of Baileys and the lushness of this I think it should be saved for a super time treat 🙂

2014 has been an incredible year, I am actually emotional looking back at it and all the amazing moments and I can’t wait to see what 2015 brings 🙂 This year I began working with TV3, began my own weekly Radio show, Started this my new baby Clare with the Hair, became ‘The Face’ of Boudoir Darlings and we created a Charity Calender with monies raised going to Clare’s Wish Foundation (a charity who grant wishes to adults with life limiting illnesses), Nominated in the UK Blog Awards and now working with RSVP. So many changes, so many new ventures yet all enjoyed and loved so much.

Clare’s Simply Scrumptious Salmon Salad

Mid-week meals can prove to be the hardest to think about sometime but this, Simply Scrumptious Salmon Salad makes for an easy, low cal, no fuss yet exceptionally tasty home cooked mid-week meal. This is one of my families favourites.

Makes: 4 servings

Preparation Time: 20 minutes

Total Time:  35 minutes

Ingredients 

  • 1lb of green beans
  • 1/4 cup red wine vinegar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon melted coconut oil
  • 1 tablespoon minced shallots
  • 1/4 teaspoon black pepper, divided
  • 4  salmon fillets
  • 1 large bag mixed salad greens
  • 1 large red onion
  • 2 large hard boiled eggs

PREPARATION

1. Preheat your grill to medium.

2. Place beans in large pan of boiling water; cook 2 minutes. Drain and plunge beans into ice water; drain.

3. Combine vinegar, mustard, oil, shallots, 1/8 teaspoon pepper in small bowl, stirring well with whisk, set aside.

4. ,If you want to, you can spray both sides of each fillet with olive oil via a mister or use one of the low cal oil sprays, I think there is no need for any oil but I know with older grills or ones not so non stick this is a necessary step,  1/8 tea-spoon pepper. Place fish, skin side up, on grill rack; cook 5-6 minutes on this side then turn and cook for another 2-3 minutes on the other side.

5. Arrange 1/4 of the greens leaves in each of the 4 bowls top with your finely sliced red onion, the egg slices, and beans. Top with salmon and  drizzle with your delicious dressing.

Tip: Add some fresh chill to the dressing for a fiery hit, also I like to warm the dressing a little at this time of the year and you may even leave the beans warm, all ways this dish works!!

Clare’s Scrumptious Grilled Steak & Sweet Potatoes

Dinner does not get much simpler than this!! Claire’s Scrumptious Grilled Steak & Sweet Potato: Here we grill some spice-rubbed striploin steaks and serve them along side some sweet potatoes with onions baked in a foil packet . Serve with steamed greens, green beans, spinach or whatever leafy green you like. 🙂 I made a little crème fresh with sun-dried tomato sauce to go along side, but if you are being super healthy, then leave the sauce out.

Makes: 4 servings

Preparation Time: 20-30 minutes

Total Time:  1hr

Ingredients 

  • 1 teaspoon ground allspice
  • 1 teaspoon ground cumin
  • 1 teaspoon ground ginger
  • 1/2 teaspoon salt, I leave this out.
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • 2 x 8 ounces striploin steak, trimmed and cut into 2 portions
  • 2-3 medium sweet potato, peeled and very thinly sliced
  • 1 large red onion, halved and very thinly sliced
  • 1 teaspoons coconut oil
  • 1 teaspoon freshly grated orange zest

PREPARATION

  1. Preheat grill to high.
  2. Combine allspice, cumin, ginger, cinnamon, coriander, cayenne and salt (if using) in a bowl. Sprinkle steaks with the spice mixture and leave to rest while you get the sweet potato ready, mix the sliced sweet potato and red onion along with oil and zest in a bowl and coat all the pieces with the oil and zest.
  3. Place two sheets of foil on top of each other (the double layers will help protect the ingredients from burning). . Spread the sweet potato mixture in the center of the foil in a thin layer. Bring the short ends of foil together, fold over and pinch to seal. Pinch the seams together along the sides to seal the packet.
  4. Place the packet on the hottest part of the oven and cook for 20-25 minutes, if the slices are thicker this will take longer. Cook the steaks on your hot grill, turning only once, cooking for 3 to 4 minutes per side for medium-rare and longer if required Transfer to plates and let rest while the potato packets finish cooking. Open the packets (being really careful of steam) and serve alongside the steaks and greens.

Tip: For the Creme fresh sauce, all you need is half a tub of creme fresh, whizz up 5-6 sundried tomatoes, add some lemon zest, fresh black pepper and  combine for a super simple, tasty sauce to have along side many foods, works great with chicken and really good as a dip for chips.

Coconut Brown Rice Pudding Cooked in a Slow-Cooker

So while trying to be super good with food choices I have discovered some fabulous, simple, tasty yet healthier alternatives to some of my traditional favorites. Today I am sharing a fabulous Rice Pudding that is possibly tastier than the traditional Rice Pudding I made but is it miles better for you also. It is a real win, win situation 🙂 Try it!!

Makes: 6 large servings or 4 with a chance for seconds 🙂

Preparation Time: 15 minutes

Total Time: 6+ hours (we are after all using a slow-cooker)

Ingredients

  • I use a very small amount of coconut oil but feel free to use nonstick / lie cooking spray
  • 3 cups coconut water
  • One regular can lite coconut milk
  • 1/2 cup sugar, you can use any sugar alternative here
  • 1 tablespoon vanilla extract or even feeling really generous, add a pod with the seeds scrapped
  • 1/2 teaspoon salt, this is one time I use salt, I am not sure what it does exactly but it adds ‘something’
  • 1 1/4 cups short grain brown rice
  • 2 tablespoons unsalted butter, cut into small pieces
  • 1 teaspoon finely grated lime zest

ricepudding1Toppings you may add: diced fresh or dried mango and pineapple, fresh or frozen and thawed raspberries, toasted shaved coconut chips, chopped toasted nuts, chopped crystallized ginger, a spoon of your favorite jam, chopped banana or anything you like, the choices are endless……

Preparation

Wipe melted coconut oil or mist the slow cooker with lite nonstick cooking spray. Mix the coconut water, coconut milk, 1 1/2 cups water, sugar, vanilla and salt in the bowl of the slow cooker until the sugar is dissolved. Stir in the rice and cook on high 4 hours or low for 5 to 6 hours.

Uncover, stir well and let stand 15 minutes. Transfer to a large bowl and stir in the butter. Continue to cool, stirring, until warm. Stir in the lime zest. Serve warm and  Top with any of your choices of toppings and enjoy!

Shiny , Glossy, Fabulous Hair Made Easy

So you want hair that shines? you want hair that feels super soft? you want hair that look as good as it feels? well then you need to read on to our Easy ways to get shiny hair tips.

.shair 1. Say yes to hair serum.
Shine serums are available that have been specially formulated to give frizzy or unruly hair a sleek sheen. Find some great options at your pharmacy, beauty supply store, or hair salon. These serum’s moisturize your hair with a light concentration of oils or silicone. To apply, “use a pea-sized amount to start,” you can always add more but you can not take away if you add too much. “Start at the bottom of your hair and work your way up, rubbing it into wet hair with your hands.” It’s important not to use too much serum, because it can weigh hair down, but if you feel you need more moisture, go ahead and add a bit more.

shinyhair  2. Eat nutritious foods.
I recommend getting your daily recommended allowances of vitamins A and E for shiny, healthy hair. Also, be sure you’re eating plenty of protein, which promotes hair growth. “Eggs and nuts are excellent sources of protein,” What you put into your body really does affect how your hair and skin looks

3. Avoid harsh chemicals.
Shiny hair is healthy hair – so don’t abuse it! Limit your hair’s exposure to harsh chemicals, like the chlorine in pools, and lye-based hair-relaxing creams. Use heat-styling as infrequently as you can get away with, and avoid products that contain alcohol, which can dry out your hair and strip its shine. Sounds simple but of your hair is in distress you will have to be very patient with it while you await the new hair growth that you will not expose to the drying elements.

4. Hydrate your body.
Just like the food you eat, Drinking plenty of water will ensure that your hair is properly moisturized from the inside out. About eight glasses a day is ideal. Keep a bottle by your side and sip from it often. Once you begin drinking 8+ glasses a day you will never look back, this helps your skin, hair and makes the whites of your eyes really bright.

5, Hair Rinse
Mix two tablespoons apple cider vinegar with one cup water, and use to douse your hair after washing. Rinse thoroughly, and follow with a light conditioner. The acetic acid in apple cider vinegar will remove residue from product buildup and help you get shiny, lustrous locks. I have used this tip since I was about 11 years old and when I have taken a break from this tip I really see a difference.

Week 2: Food and Activity Diary

So here we go.. Week 2 of my food and activity diary is done and dusted.

Each week we will add  “one big change” to the food and activity as little, constant changes are more doable in my world, I have found trying to do too much at once can often end in given up because it just seems too hard and too much of a change over night. Last week our “one big change” we did, was to swap all other oil’s in cooking for coconut oil (see the blog on the benefits of coconut oil here) http://clairewiththehairmccarthy.com/2014/09/07/nuts-for-coconut-oil/

This week the “one big change” is from a micro blog I follow and they posted this (( No candy, No cakes, No white bread, No white pasta, No white rice, No chips, No fast food (be it curry’s, burgers, pizza etc) No chocolate, No ice cream, No alcohol)) they say to do this for 21 day’s and you will see a real difference in the type of food’s you crave as well as getting smaller. Let’s see: Today, I am on day 3 of this “one big change” and it is going well, I do not like chocolate and cakes but I do love savory snacks, white bread and wine, so far I am not missing these but even if I do I will make myself stick to the 21 day’s.I have a party for a very dear friend on Friday night, This will be the real test on the snacks and wine front.

So Activity wise, this week I walked home for lunch each day, Took my dog out for her daily (now extended) walk and managed to fit in two Spinning classes. If you read week one, you would have read how hard I found my 1st day Spinning but I am sticking with it as I can see how much further I can go in a really short space of time, Spinning has some amazing benefits and mixed with other classes it can only do great things. Here are a few of the reason’s I Spin.

1. You’ll get the energy you need to give 100 percent the whole workout.
From the instructors to the music to the constant change in lighting, good spin classes never seem to have a dull moment. “The best tweet I’ve ever seen someone post after taking my class was ‘I came tired, and left alive,’ “You’re going to come and have an instructor who’s giving 120 percent and that’s contagious.

2. You’ll push yourself to the max, but no further.
Spin classes aren’t made for Tour de France contenders (well, maybe some are, but not your average class). They are for everyone from beginner to advanced levels of fitness. “they focus on metabolic intervals, light resistance to heavy resistance, so your legs burn and are challenged, but never feel too fatigued,” “It may hurt a little to walk up and down the stairs after class, but who doesn’t love knowing they worked hard?

3. You’ll get lost peddling to killer music.
And after taking class a few times, you’ll learn which instructor you like best, and who has the most similar taste to you in music. There’s nothing like keeping pace with a good beat and seeing everyone else around you on the same count. Research even supports that athletes work out harder when listening to music at a faster tempo. “Music is a huge part of working out. “It allows you to bring up feelings and emotions that you wouldn’t think about at the office. If you had a bad day, it helps you restart.” And you may discover some new jams to download at home and add to your own exercise playlist.

4. You’ll get a full-body workout — not just legs!
Didn’t expect to see weights in a cycling class? It’s becoming more and more popular, as well as the use of resistance bands. While Spinning is great for your legs, different methods are focusing on giving riders more of a total-body burn. “If we’re promoting a full-body workout, we want to make sure we’re delivering.

5. You’ll get used to that sore butt feeling.
We’re not going to lie, if it’s your first time, or you haven’t been in a while, chances are, your bum will be sore the next day. So what can you do to avoid squirming at your desk the day after? Be sure you’re not in the saddle the whole time. “Though it might seem easier to stay seated, heavy-resistance saddle riding at, say, 22 torque, that could hurt,” . Most classes will have you in and out of the saddle every other song. “If we spend 50 percent of one song out of the saddle, the next one we’re in,” . If you are still not comfortable? Try using a padded seat or shorts with padded bits in them.

6. You’ll define and lean out your legs.
Notice we didn’t say bulk up. My instructor said he hears it all the time. “It’s a huge misconception that ‘my legs are going to get big if I spin,'” he says. “If I chest press 300 pounds, yes I would get bigger, but that’s like riding with high torque for eight hours.” The interval training that most studios practice, with some upper-body work, allows you to tone muscles that you may have not even known you had and sculpt your body back into youthful shape.

7. You’ll feel that team spirit.
While it can be fun to go on a ride alone to clear your thoughts, the energy you feel from your spin class peers is contagious. “If you come into class and really show up, your 45-minute ride could feel as fast as 20 minutes because you’re enjoying it,” s “For the spinning instructor, it’s all about entertaining, interacting with the crowd and having a great time so that riders aren’t watching the minutes drag on, that’s the worst kind of workout.” And when blacklights are switching on and off, and the person next to you is screaming out in anticipation and excitement for the coming climb, you won’t even realize it’s your second-to-last song. You’ll be having too much fun working out and sweating.

8. You’ll leave feeling euphoric.
“That’s the best way to describe the energy high that sticks with you after the ride, our instructor always try to make the last song a powerful one so that people remember it as they leave.

Choosing to ride doesn’t mean giving up all other exercise and trading in the barbell for spin shoes. But if you’re healthy and injury-free, adding cycling into your workout regimen a few times a week can only advance your fitness. And if you’ve decided that spin is the way you’re going to get fit, then don’t be scared to fully commit. “No matter which method you choose, Spinning in any capacity is amazing for you. “It can only help you better yourself.”

In addition to the increased activity , I have also began to attempt to eat healthier, by following the No candy, No cakes, No white bread, No white pasta, No white rice, No chips, No fast food (be it curry’s, burgers, pizza etc) No chocolate, No ice cream, No alcohol for the next 21 day’s I would hope habits would change but also my home cooking style has been looked at, In addition to using less and a better oil for cooking, I have also increased my vegetable intake and decreased my fat’s on meat’s and banned all processed burgers, pies, cheese etc. food is to be clean from here on in. I have found some quick, simple but low fat dishes that are delicious. I have included pictures of some of this weeks foods, I will add full ingredients list later.
