Some day’s you just want something super easy, non fuss, on the table in minutes rather than hours and this is when I reach for things like my Chicken Wraps, they are a favorite with my husband and children alike .

Clare’s Chicken Wrap’s

Makes: 4 servings

Preparation Time: 15 minutes

Total Time:  20 minutes

(if making my baked chips add 25 minutes for timing)

Ingredients

  • 500g skinless chicken breasts
  • 1ltr low salt chicken stock
  • 1 yellow pepper , diced
  • 4 tomatoes
  • 4 spring onions
  • 1/3 iceburg lettuces finely sliced
  • large wholewheat wraps
  • 1 pot of creme fresh / low fat cottage cheese
  • Cracked black pepper
  • 3tbs of French mustard
  • 400g potatoes (if making the chips)
  • 5tbs of tomato relish

PREPARATION

1/ Place the chicken and stock into a saucepan and cook on medium for 6-10 minutes, this will depend on the thickness of your chicken but always cut into the thickest part to ensure there is no pink color left , one cooked remove and shred

2/ Dice the pepper, tomatoes, onions and place in a large bowl, add the chicken, black pepper, half the tub of crem fresh , mustard and mix well

3/ warm the wraps in the oven/microwave for a few seconds, remove and fill with the chicken filling

4/ If making the chips, you need to peel and cut into large pieces, place on a baking sheet, add 1tbs of coconut oil and sprinkle with black pepper, cook for 20-25 minutes and serve with dip (mix some creme fresh with tomato relish)

Clare’s Satay Fake Away Skewers

Clare’s Satay Fake Away Skewers

Fancy a take away but want a slightly lighter version? then try my Fake Away Skewers. I love this  tasty, versatile peanut sauce not only as a dip for grilled satay skewers, but also for Stir Fried Rice or Noodles with Chicken and Peanut Sauce. The Satay sauce contains a little bit of heat, but you can cut back on this or eliminate it altogether if you wish. The sauce keeps for days in the fridge so make ahead of time for a simple go to sauce mid week. You also can thin the sauce with a little coconut milk, water, or chicken stock.

Makes: 4 servings (main meal) 8 (starter)

Ingredients

  • 4 Skinless / Boneless Chicken Breast Fillets
  • 1⁄2 cup  peanut butter ( I used Almond Butter, reasons in week 6 Food & Activity Dairy)
  • 3 tablespoons soy sauce
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon brown sugar
  • 1 tablespoon chilli paste / I clove of minced Garlic (Fresh can be unpredictable heat wise hence opting for the paste option)
  • 1⁄2 teaspoon fresh chopped  coriander
  • 1 cup water
  • 1 tablespoon freshly squeezed lime juice.

PREPARATION

1/ In a small saucepan, combine the peanut butter, soy sauce, ginger, brown sugar, chilli, garlic and coriander. Stir in the water. Heat the ingredients over medium heat, stirring to combine. Do not let the sauce boil or it will separate. The consistency of the sauce should be pourable, like double cream. When the peanut sauce is hot, stir in the lime juice. Taste the sauce and add a little more lime juice if you like more acidity. The sauce will keep, covered in the refrigerator, for about 1 week.

2/ Then take the  chicken fillets and slice  into finger size lengths.  Thread onto skewers ( you can buy these in your supermarket or pick them up in your butchers.) then smother the chicken in your satay sauce, leave to sit for 30 minutes, place on a baking tray lined with baking parchment and grill, turning after 6-8 minutes and brushing with remaining sauce as you go.

Tip: Soak the Skewer Sticks in water while you prepar all the other bits, this will help them not to burn under the grill

I served these with some sweet chilli Prawn Skewers and Brown rice for our Saturday Night ‘Fake Away’ I will add these recipes next week.

I visited The Buttery twice in the last few weeks, once for Breakfast and once for Lunch, I will talk about both here beginning with Breakfast.

The Buttery is located on Bedford Row in the heart of Limerick city, it is a mid priced bistro kind of spot. The seating is slightly quirky and pretty, with plenty of space between tables in a nice bright, open setting. Service is good and fairly fast.

Breakfast in The Buttery was delicious , the menu is small enough but seems to cover what I want in a Breakfast, they have porridge, full Irish, eggs every which way, pancakes and what I went for, the French toast, bacon, eggs and maple syrup. They also have a choice of tea’s, coffee’s and juices.

5 pieces of French toast arrived with some grilled back rashers and a pot of maple syrup in the center with scrambled eggs served on the side. This is never the kind of breakfast I would have at home, at home I would have cereal, toast, fruit etc so this was a lovely treat and one I will certainly return for. I paid around €10-13 for my breakfast, I did not take a picture of the menu and they have not got this online to share with you.

All in all The Buttery is a great spot in the center of the city for a good quality, mid priced breakfast.

Now onto Lunch, this again is a simple affair as far as choice is concerned, they have 1-2 daily specials, with a few wraps, baps, burgers etc on the main menu.

Lunch starts at about €12 for a main dish , I ordered a chicken bap with chips and my husband had their daily special burger, both were ok all be it a little on the bland side, for Lunch I would not imagine I would return to The Buttery, however in saying this, the Breakfast was very good so maybe other item’s on the Lunch menu are better than the options we selected.

Clare’s Family Favourite Choccy Rocky Road

So the long weekend is but a distant memory, the over indulgence of the Easter Treats has passed and for most we are back to work feeling totally sorry for ourselves because we are indoors and missing out on the few days of glorious sunshine that we have been so lucky to get.

But fear not because today I have a super treat that will cheer you right up, keep the kiddies busy and will finish off all those ends of Easter Eggs you have left over.

These are my no bake (great for the kiddies to make) Choccy Rocky Road Chunks !

Makes: 8-12 pieces

Preparation Time: 10 minutes

Total Time: 15 minutes (plus setting time)

Ingredients

360g of Chocolate (use whatever one’s you have left over, milk, dark, white)

120g Digestive Biscuits

100g Chopped roasted hazelnuts (or any you particularity like)

100g chopped Walnuts

150g Mini Marsh Mallows

PREPARATION

1/ Break up the chocolate and melt in a bowel over a pan of simmering water (see picture) unill filly melted

2/ Pour the nuts into a dry pan and roast for 2-3 minutes, remove and chop into fine pieces

3/ Place the Mini Mallows, Biscuits (smash these up) and nuts in a bowl and mix well

4/ Pour the dry mixture into the Chocolate and mix well

5/ Place greese proof paper on the baking sheet and top with the Choccy Rocky Road

6/ Allow to cool, cut into pieces and enjoy!

Clare’s Prawn Fried Rice

I am a big fan of Fried Rice and this is one of my favourites, it is simple, like seriously simple to create but packs a real flavor punch and so much better than opting for the take out version, if you are not much of a cook, you will be able to create this and if you are a whiz in the kitchen you may tweak to create a whole different flavor. If you are not a fan of Prawn’s then add chicken,beef etc and for a fab veggie option add tofu, broccoli and or mushrooms.

250g of Brown Rice (I used the boil in the bag type, feel free to use the 2 minute micro version)

400g of Fresh water jumbo prawns

150g Baby Spinich

1 med white onion Peeled and diced

100g button mushroom sliced

3-4tbs coconut oil

1bs Chilli paste

1tbs Garlic paste

1/4tbs Cracked black pepper

2tbs Mirin

1/4tbs sugar

2tbs light Soya Sauce

PREPARATION

1/ Place the rice in a pan of hot water and bring to the boil and cook per packet instructions, or as per microwave instructions. Once cooked set to one side.

2/ Cook the onion and mushroom in the coconut oil until soft 3-5 minutes, remove from the pan and set to one side.

3/ Garlic, Chilli, Mirin, Pepper, Sugar and soya sauce in the pan and add the prawns, cook for 1 minute, add the spinach, mushrooms, onions and rice and mix well, cook for 2-3 minutes and plate up.

4/ Fry eggs in 2-3tbs coconut oil and place o top of your Prawn fried rice.

Chocolat Restaurant Limerick City

This is a super spot for lunch any day of the week, as it offers incredible value, with super quality and great service. Service is speedy yet not rushed, quality is incredible yet this is affordable and I would say the best value lunch in Limerick right now (for soup, sandwich, chips and a coffee with a biscuit on the side for an mind boggling €8.95)

I have been here many times and samples their evening set menu, al la carte and their very tasty cocktail menu but for now let me tell you about my lunch here and the choices, the total bill, and some pic’s of this super lunch.

So I was in town shopping with my youngest daughter, she is 12 and loves the food here, and we decided this was the spot for us this weekend, we both opted for the €8.95 sandwich combo but as we both opted for the steak sandwich there was a €2 supplement, totally worth it! We got a fabulous steak sandwich, chips and a super celeriac and apple soup! delicious and a coffee for finish.

All in all this is a great spot, If you are working in the city, in Limerick for leisure, meeting the girls for a catch up, in town celebrating anything, this is a great spot, food is always good and always priced really well.

Jp’s a rustic country pub and since opening in November 2008, they have developed a reputation for excellence in food and a good old fashioned warm welcome.
JP Clarke’s was awarded Best Gastro Pub in Clare 2013 by the Irish Restaurant Awards and it is easy to see why if you take the time to visit.

We went for a late lunch / early evening meal on Sunday, the weather was fantastic so as you can imaging Bunratty was heaving but JP’s had a table for my hubby and I within 5 minutes of arriving. Fantastic start.

Jp’s have a typical bar food menu, with the addition of daily specials and these are served from 12-9.30pm daily.

This is just a snip at what they have to offer but it gives you an idea as well a the kind of prices to expect to pay.

My hubby and I both choose one of the item’s from the specials board, the Grilled salmon, chunky chips with a side salad, the salmon had a orange, spring onion zesty crumb! ( I know it does not look like a crumb to me either but this is as described on the menu) was €13.95 for this and with the pudding in at €6.25 , add a coffee and both of us had a really lovely Sunday lunch for under €50, a very good price considering the quality, the service and the location, Bunratty is a tourist hot spot yet you can eat all over Bunratty for a very fair price!

Attached to JP’s is Gallagher’s , In 2010, Gallagher’s Seafood Restaurant was crowned ‘Best Restaurant in Clare’ by the Restaurant Association of Ireland.

Bottom line , JP’s offers great service and food at a very fair price and I would have no problem recommending this place to anyone and I will absolutely be returning for some more of their delicious delights.

Jp’s is a great casual dining experience for lunch, evening and afternoon treats, Gallaghers is a little more towards fine dining with some incredible creations, I will do a full post on Gallaghers very soon for you.

Clare’s Hot & Spicy Chicken Salad

Today I bring you my Hot and Spicy Warm Chicken Salad. The weather was so lovely last weekend so I made this and Its so easy yet it is so tasty, really quick this one is too. Super for a day you don’t want to be stuck in the kitchen and because the chicken is so tasty you feel like you are eating more than a salad.

Clare’s Hot and Spicy Warm Chicken Salad

Makes: 4 servings

Preparation Time: 15 minutes

Total Time:  30 minutes

Ingredients

  • 200g mixed lettuces leaves
  • 500g of skinned, boneless chicken breasts
  • 3tbs of smokey paprika
  • 1tbs cracked black pepper
  • 1tbs salt
  • 1tbs coconut oil
  • 1 medium red onion thinly sliced
  • 16-20 cherry tomatoes halved
  • one carrot finely grated

REPARATION

1/ Place the chicken breasts between two sheets of grease paper and bash with a rolling pin to flatten them to about 1/2 an inch thick, once flat mix the paprika, pepper and salt together and press onto the Chicken, Place the coconut oil in the base of a heavy bottomed pan and place the chicken in on a med heat for 4-5 minutes , turn and continue to cook for another 4-5 minutes, leave to rest for 2-3 minutes before slicing as per image.

2/ Slice the red onions, tomatoes, and grate the carrots, mix with the salad leaves.

3/ Arrange the salad and vegetables on your plate and top with the chicken, you do not need an additional dressing as the chicken is very tasty but if you must have something, mix 1tbs lemon juice, tbs white wine vinegar, 1tbs of wholegrain mustard and 1tbs of cold water to dress the leaves.

Top Tip: This is great with pork of lamb chops and equally great with halloumi cheese.

Clare’s Basil , Lemon & Pepper Chicken

The last few weeks have been pretty cold so we posted a lot of curry’s, stews and comfort foods but now the evening are getting longer and the temperature outside is increasing we will look at fresher, lighter and more summer friendly recipes, still good for you, always using little or nothing in the way of processed foods, quick to get on the table after work and super for all the family. This first one is packed with flavor, is very low in fat and my family just love it, I hope you enjoy this as much s my family do.

Ingredients

  • 360g Skinless, Boneless Chicken Breasts
  • 400g Peeled and diced Potatoes
  • Bag of Salad Leave
  • 1/2 a cucumber Sliced
  • 12 Cherry Tomatoes
  • 1 Finely Sliced red Onion
  • 2 tbs Coconut Oil
  • 16-18 Fresh Basil Leaves
  • 3 tbs Cracked Black Pepper
  • 1 tbs Smoked Paprika
  • Juice and Rind of 1 Lemon

PREPARATION

  1. Place the chicken in between two slices of grease proof paper and bash to 3/4 inch thick, place the basil, lemon rind and 2 tbs of cracked black pepper in a pestle and mortar and grind, add to the flattened chicken and place in the fridge while you get the rest of the meal ready.
  2. Put 1tbs of coconut oil on a backing tray and pop into a hot over to heat the oil, place the potatoes, 1tbs black pepper and paprika in a bowl and mix well, add to the heated over tray and cook for 15 minutes, remove and turn and pop back in for another 15 minutes.
  3. Chop the salad leaves, add the sliced onion, sliced cucumber and cut the tomatoes into 1/4 and add these, mix well (I leave this dressing free as the potatoes and chicken are tasty enough but feel free to add any low fat dressing of your choice to this)
  4. Place 1tbs into a large frying pan, heat this and add the chicken, cook for 5-6 minutes without shaking the pan or moving the chicken, turn and cook for another 3-4 minutes. Make sure the chicken is cook through (all times are approximate and will depend on how thick your chicken is or how small you diced the potatoes)

Plate up and enjoy!
